Strawberry Balsamic Ice Cream

You'll have to trust us on this one because once you do, you'll never want plain ice cream again… Our Gold Label Balsamic Vinegar perfectly balances the sweetness of the strawberries and adds a delicious depth of flavour to this favourite dessert.

400g strawberries hulled & quartered plus extra to serve

70ml Balsamic Vinegar plus extra to drizzle

100g pure icing sugar

500ml double cream

2 cups strawberries hulled & quartered plus extra to serve

1/4 cup Balsamic Vinegar plus extra to drizzle

2/3 cup pure icing sugar

2 cups double cream

  • Step 1.

Place strawberries and Balsamic Vinegar in a bowl and leave to marinate for 20 minutes. Transfer to a blender with sugar and blend until smooth. Place in a bowl, cover and refrigerate for 2 hours.

  • Step 2.

Whip the cream, then fold into strawberry mixture. Pour into a shallow container and freeze until frozen at edges. Beat together with an electric whisk. Pour back into container and re-freeze. Repeat 2 or 3 times, freezing fully when you're happy with the texture. (Alternatively, use an ice-cream machine following manufacturer's directions).

  • Step 3.

Serve the ice-cream with strawberries and a drizzle of Balsamic Vinegar.
